Instructions:

Heat the Milk: Start by bringing the milk to a boil on medium heat in a large pan.

Add Rava (Semolina): Gradually stir in the Rava to avoid lumps. Cook until the milk thickens and the Rava is fully absorbed.

Incorporate Ghee: Add the ghee slowly, mixing well. Continue stirring on low heat.

Add Sugar: Once the mixture thickens, add the sugar. Stir continuously until the sugar dissolves completely and the mixture starts leaving the sides of the pan.

Flavor with Cardamom: Add elaichi powder to enhance the aroma and flavor of the barfi.

Optional Dry Fruits: If using, mix in cashews, almonds, and pistachios at this point. These not only add a wonderful texture but also elevate the visual appeal.

Set the Barfi: Once the mixture turns dense and glossy, pour it into a greased tray and flatten it evenly. Allow it to cool.

Cut into Pieces: Once cooled, cut the barfi into your preferred shapes—squares or diamonds.

Pro Tips:

  • Adding dry fruits like almonds and pistachios not only softens the texture but also enhances the aesthetic value and provides a nice bite.
  • Ensure continuous stirring to avoid sticking or burning the mixture, especially after adding the sugar.
